Tuber Bake!
I successfully cooked my first co-op dinner tonight. Originally, the plan was to make a fritatta with carrots, potatoes, parsnips, and onions, but I woefully underestimated prep time. Okay, I thought, I have many, many chopped up tubers (and onions), and a bowl full of eggs, but I don’t have time to cook the veggies and then put them in the egg mixture to cook. Only I thought that much more frantically and with a twinge of fright—I’ve never cooked for thirty people before, and I certainly didn’t want dinner to come out forty minutes late. Fortunately, I had a rather good thought right then: the tubers and onions could go into a pan with oil and salt and pepper and be a tuber bake, and the eggs could just be scrambled—simple, and half the time.
There was also pumpkin pie, and it was good.
